Broccoli Pesto

Broccoli pesto – there’s no tastier and more effective way of packing in extra folic acid into your diet through food. Try this recipe: Recipe: Broccoli Pesto
2 cups lightly steamed broccoli florets (still bright green, just going soft)
2 cups lightly steamed baby spinach leaves
¼ cup toasted Vital sunflower seeds
¼ cup toasted pine nuts
½ cup olive oil
¼ cup crumbled feta or finely grated parmesan cheese
2 crushed garlic cloves
Juice and zest of ½ lemon
Salt to taste

Combine in a food processor, or with a stick blender until smooth. Add small amounts of water until desired consistency is achieved.
